Happy Monday! It’s a beautiful day here in Pittsburgh, clear and cool for a change!

Unfortunately, the weather did not hold out for Yoga Fest at Point State Park this past Saturday. There were 5 tents set up with yoga, pilates, and other classes all day long, 6 am – 6pm.
My friends and I arrived around 8 am and took a hip-opening class. Mid-downward dog, the skies opened up and it started to POUR. All the yogis crammed together (even sharing mats!) under the tents and tried to make the best of the less-than-perfect weather.
Between classes, I bought some greek food for lunch and a mini cupcake for dessert!
My friend Ashley tried SUP (stand up paddle boarding) yoga while my friend Jen and I did a Pilates class. You can see us (our legs!) in the beginning of this video clip.
I got to meet two fellow RDs and blog readers – hi ladies! Thanks for saying hello! There was also an all-day display of Bikram competitors. I ended up taking a power yoga class then heading home – but it was a great event that I’m hoping to do again next year!
Some food related things:
This granola is like crumbled peanut butter cookies in a bag. Bad news for those with limited self control (me!).
I created a lightened up creamy sundried tomato sauce that I served over spaghetti squash, but would be great on regular pasta. Will share the recipe once it’s posted on my employer’s blog!
I try to eat mostly real food protein sources rather than faux-meats, but this veggie bacon hit the spot with raisin and almond butter french toast yesterday!
